Southwestern-Style Black Bean Tortilla Soup

Ingredients

4 tablespoons garlic,
12 ounces each red bell pepper and green bell pepper,
4 ounces chipotle peppers,
10 ounces Spanish onion,
4 tablespoons canola oil
20 ounces corn,
1 pound stewed tomato
1 gallon vegetable stock
10 Morningstar Farms® Spicy Black Bean Veggie Burgers
salt and pepper to taste
20 ounces sour cream
4 tablespoons cilantro,
10 ounces Sunshine® Cheez-It® Original snack crackers
20 fresh lime wedges

Directions

1. Sauté garlic, peppers, chipotle peppers and onions in oil for 4 minutes.
2. Add corn and tomatoes.
3. Add vegetable stock and simmer for 30 minutes.
4. Add Morningstar Farms® Spicy Black Bean Burgers and simmer an additional 10 minutes. Adjust salt and pepper to taste.
5. Garnish soup with sour cream, cilantro, Cheez-It® crackers and fresh lime.
