Breakfast Empanadas
Servings: 12 EMPANADAS
Ingredients
- 24 each (2 pounds) Morningstar Farms® Veggie Breakfast Sausage Patties, diced
- 24 Eggs, Large, Scrambled
- 3 cups (1 pound) Green Pepper, Fresh, Diced
- 3 cups (1 pound 4 ounces) Tomato, Fresh, Diced
- 24 each Empanada Shells, Ready to Bake
Directions
1. Preheat oven to 350 deg F.
2. Cook Morningstar Farms® Veggie Breakfast Sausage Patties, 1 of the eggs, green peppers, and tomatoes in a sauté pan with oil.
3. Scoop half of the mixture into an empanada shell.
4. Fold shell over and seal with a little water.
5. Brush shell with egg and bake in 350 deg F oven for 9 minutes until crisp.
6. Repeat with second shell.
