Bear Naked® Triple Berry Coconut Energy Bites
Moist and chewy bites made with Bear Naked Triple berry Granola, dried blueberries, nut butter, chia seeds, flax seed meal, coconut with a hint of cardamom.

Ingredients
- 3 lbs. Bear Naked® Triple Berry Granola
- 6 cups Old Fashioned Oats, rolled
- 3 cups Golden Flaxseed meal, ground
- 3/4 cup Chia Seeds
- 1.5 tsp. Sea Salt, fine
- 1 tbsp. Cardamom, ground
- 6 cups Almond OR Peanut Butter, smooth
- 3 cups Honey
- 2 tbsp. Vanilla Extract
- 2 tbsp. Coconut Extract
- 3 cups Dried Blueberries
- 3 cups Moist Coconut Flakes, sweetened
Directions
1. In a large mixing bowl, combine granola, oats, flaxseed meal, chia seeds, salt, and ground cardamom.
2. Place the almond butter and honey in a microwave safe bowl or a saucepan. Heat in the microwave, or on stove top over low heat, until nut butter mixture is melted. Stir until smooth.
3. Add the vanilla and coconut extract to the melted nut butter mixture. Stir until smooth. Pour over the oat mixture and stir until well combined. Stir in the dried blueberries and coconut.
4. Using a #60 (0.53 oz.) sized spring-loaded scoop, fill scoop and then compact the mixture into the scoop using gloved hand.
5. You need to press the mixture into scoop firmly to make a round shape that holds together.
6. Place scoops onto parchment lined sheet trays. Cover trays with plastic wrap and refrigerate for several hours until well chilled.
7. If rounder shaped bites are desired, after initial chill you can gently roll the scoops into rounder shape small balls using gloved hands. Place bites in an airtight container with parchment paper between layers no more than 2 deep and keep refrigerated for up to 7 days OR bites can be frozen.
