Apple Pie Mini Bundt Cakes
Servings: 6 MINI BUNDT CAKES
Ingredients
- 1/4 c butter, unsalted softened
- 1 egg
- 1/4 c milk
- 1/2 tsp vanilla extract
- 2/3 c flour, all purpose
- 8 t Kellogg’s® Apple Jacks®, ground
- 8 t Kellogg’s® Frosted Mini-Wheats®, ground
- 1 tsp baking powder
- 1/4 tsp salt
Apple Jack Streusel:
- 1 c Kellogg’s® Apple Jacks®, slightly crushed
- 1 c Kellogg’s®Frosted Mini-Wheats®
Frosting:
- 1 jar Vanilla Frosting (heated to pour)
Directions
Cakes:
1) Preheat oven to 350°F
2) Spray mini bundt pan with nonstick cooking spray
3) In a large bowl, whisk together the flour, ground Kellogg’s® Apple Jacks®, ground Kellogg’s® Frosted Mini-Wheats®, salt and baking powder
4) In a mixing bowl (stand mixer with paddle) cream together butter and sugar
5) Beat in egg, milk, and vanilla
6) Add dry ingredients and mix
7) Pour batter into bundt pans, filling ¾ of the way
8) Place pan in oven and bake 25-30 min (a cake tester or toothpick, should come out clean)
9) Remove from oven and allow to cool on a wire rack (cool enough to handle but still slightly warm)
Apple Jack Streusel:
1) Mix 1 c each of slightly crushed Kellogg’s® Apple Jacks® and Kellogg’s® Frosted Mini-Wheats® with ¼ - ½ c melted butter, place on sheet tray in 300° oven for 25 min
2) Allow to cool and then crumble
Frosting:
1) Top with Vanilla Frosting (heated to pour) and Apple Jack streusel
